Here’s a way to hit three of the five food groups at breakfast plus tuck in some serious fiber for not much effort. Tastes yummy, too.
Sample packets of the new Wheaties Fuel and Fiber One 80 cereals showed up at my Y just in time to put this simple breakfast on the blog. Simple Post Grape Nuts whole grain cereal works with this recipe, too. All three cereals crunch with conviction. Fuel and Fiber One 80 bite with a honeyed sweetness that defies their good-for-you rep. Don’t overdo it on the cereals; they’re not light in calories, but the fiber fullness and sweet satisfaction I get from this easy breakfast keeps me going until lunch.
Yield: One serving
1/2 cup fat-free Greek-style yogurt
1/3 cup crushed pineapple with juice (include some juice in the measure)
1/2 teaspoon vanilla extract
1/4 cup whole grain crunchy cereal like Post Grape Nuts cereal, General Mills Fiber One® 80 cereal or Wheaties® Fuel®, divided
1 packet sweetener (optional)
5 to 6 dried small bits of dried fruit or raisins for color
- Stir yogurt, pineapple and vanilla together. Add most of the cereal, reserving some for garnish on top. Mix in.
- Taste. Add sweetener if desired.
- Top with reserved cereal and dried fruit.
Note: Measure everything until you recognize serving sizes. Have all ingredients ready before you make a recipe and it's easier to keep track of what you've done.
I love yogurt and fruit for breakfast but I never thought to stir pineapple in. Sounds delish!! I'll try it tomorrow.
